We love Thai curry 🇹🇭💚⁠ It's not only quick but also super tasty! ⁠ ⠀ Creamy, pleasantly hot, slightly sour, fresh and spicy. Once again a true taste explosion! ⁠ ⠀ You can also adapt it to your taste, you can replace the vegetables mentioned with others. With chicken or tofu you also have valuable protein in your meal! ⁠ ⠀ In Thailand curry is served with wonderfully fragrant jasmine rice. Thai curries are mostly based on coconut milk, which gives them a wonderful creaminess. ⠀ Make sure to try it out 🌱⁠⠀

1 Can of coconut milk
100 g Sugar snap
1 Sweet potatoes
0 Eggplant
1 Lemongrass
2 Cloves of garlic
1 Spring onions
1 Bean sprouts
3 TL Lime juice
2 TL Green curry paste
3 TL BitterLiebe powder
1 Fresh coriander

PREPARATION
Toast the sweet potato and eggplant in a little oil until they are light brown
Add chopped garlic and lemongrass
Add the curry paste, coconut milk and BitterLiebe powder and let everything simmer for 20 minutes
Add the sugar snap peas for another 5 minutes
Serve the curry with rice
Garnish with spring onions, chilli, and garlic
