This summer bowl is perfect for the warm days 🌞💚⁠
Ideal for preparing for work or on the go 👨‍💼👩‍💼 You can of course also use other vegetables. On the one hand, the dish can be adapted to your preferences and can be prepared to finally utilize ingredients that are in danger of going bad 🙈⁠

This dish is inspired by the Vietnamese dish »Bun-Chay«. 🇻🇳⁠
That's why we opted for cucumbers, carrots, peanuts and bean sprouts 💫 These give the dish that certain bite! ⁠

1 Stück Carrot
0 Stück Cucumber
100 g Mung beans
250 g Rice noodles
1 Stück Pinch of salt
1 Hand voll Coriander
1 Stück Spring onion
3 EL Soy sauce
1 Stück Lime
1 EL Peanut butter
1 TL BitterLiebe powder

PREPARATION
Cook the rice noodles in salted water according to the package directions. Then wash the pasta well with cold water. This prevents them from sticking together. Lightly salt the pasta.
Cut the cucumber and carrot into thin strips.
Cut the coriander and spring onion as finely as possible.
For the dressing, mix the soy sauce with lime juice, BitterLiebe powder and peanut butter.
Garnish the bowl with peanuts, spring onions, and coriander.
